Apricot Chicken Pastries

Ingredients

  • 250g chicken breast fillets, finely chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/2 cup Angas Park Dried Apricots, finely chopped
  • 2 tablespoons sweet chilli sauce
  • 1/2 cup shredded tasty cheese
  • 6 sheets frozen puff pastry, thawed

Method

  1. Place chicken, onion, garlic, apricots, sweet chilli sauce and cheese in a bowl and mix well.
  2. Cut out 9x7cm circles for each pastry sheet. Place half of these circles on trays lined with baking paper.
  3. Place filling on each of these circles then top with another circle of pastry. Press down edges.
  4. Bake in a pre-heated hot oven (190ºC-210ºC) for 15-20 minutes or until puffed and golden. Serve hot.
