Apricots with Vanilla Cinnamon Syrup

Preparation time: 5 minutes Cooking time: 12 minutes

Ingredients

  • 2 cups water
  • 1/2 cup caster sugar
  • 1 vanilla bean, split
  • 1 cinnamon stick
  • 225g Angas Park Soft & Juicy Apricots

Method

  1. Place water, sugar, vanilla and cinnamon in a saucepan and bring to the boil.
  2. Reduce heat, add apricots and simmer for 10 minutes.
  3. Serve with yoghurt or as an accompaniment to cereal.
