Beef and Prune Pies

Preparation time: 15 minutes Cooking time: 30 minutes

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 500g diced beef
  • 1/2 cup Angas Park Pitted Prunes, chopped
  • 2 tablespoons plain flour
  • 1/2 cup red wine
  • 1/2 cup water
  • freshly ground salt and pepper, to taste
  • 8 sheets shortcrust pastry

Method

  1. Heat oil in a non-stick frying pan. When hot add onion, garlic and beef and sauté until golden. Add prunes and flour and cook for a further minute.
  2. Add wine, water and salt and pepper, bring to the boil then reduce heat to low and cook for 2 minutes. Set aside to cool.
  3. Cut out 48 circles of pastry using a 5cm cookie cutter. Press half of them into mini muffin pans. Top with beef mixture then press pastry lids down firmly.
  4. Bake in a pre-heated moderately hot oven (180ºC-200ºC) for 30 minutes or until golden.
