Honey Chicken

Preparation time: 10 minutes Cooking time: 1 hour 30 minutes

Ingredients

  • 1.8kg chicken
  • 1 tablespoon honey
  • 1 tablespoon seeded mustard

Stuffing

  • 3/4 cup dry breadcrumbs
  • 1/2 teaspoon ground cardamom
  • 1/4 cup Angas Park Dried Apricots, chopped
  • 1/4 cup pistachios, chopped
  • 1 egg, lightly beaten
  • 2 tablespoons butter, melted
  • juice of 1 lemon

Method

Stuffing

  1. Mix all ingredients together until well combined. Place inside cavity of the chicken, pressing down firmly.

Chicken

  1. Mix together honey and mustard and brush over chicken.
  2. Place on a tray on top of a roasting pan and bake in a pre-heated moderately slow oven (150ºC-170ºC) for 1 hour. Cover with foil if browning too quickly and return to the oven for a further 30 minutes or until cooked. Serve with roasted vegetables.
