Peach and Coconut Pudding

Preparation time: 10 minutes Cooking time: 50 minutes

Ingredients

  • 125g unsalted butter
  • 1/2 cup golden syrup
  • 1 1/2 cups self-raising flour
  • 200g Angas Park Dried Peaches, diced
  • 1 cup desiccated coconut
  • 2 eggs
  • 1/2 cup milk

Method

  1. Place butter and golden syrup in a medium saucepan and heat until butter melts.
  2. Place flour, peaches and coconut in a mixing bowl and stir in eggs. Add butter mixture and milk and mix well.
  3. Place into 4 ovenproof tea cups and bake in a preheated moderately slow oven (150ºC-170ºC) for 20-25 minutes or until cooked
  4. Serve warm drizzled with extra golden syrup and cream or custard.
