Peach and Passionfruit Flummery

Preparation time: 10 minutes + refrigeration Cooking time: 2 minutes

Ingredients

  • 1/2 cup Angas Park Dried Peaches, chopped
  • 1 1/2 cups water
  • 1/2 cup caster sugar
  • 1 1/2 tablespoons gelatine
  • 2 tablespoons plain flour
  • pulp of 3 passionfruits

Method

  1. Place peaches, water and sugar in a saucepan. Bring to the boil, reduce heat and cook a further 2 minutes. Gradually add gelatine and flour, stirring constantly. Remove from heat and pureƩ until smooth. Stir through passionfruit.
  2. Refrigerate until mixture starts to set then beat with electric beaters for 10 minutes or until thick and creamy.
  3. Spoon mixture into 4 martini glasses and refrigerate until set.
